ROOTED: RAW SPROUTED TURMERIC HUMOUS
Humous is a staple in any vegetarian and vegan diet, as well as a much loved dish for even the biggest of meat eaters. We've always strived to find a humous with extra health benefits and finally came up with this raw version. Live food has live energy and with a mix of ginger, turmeric, raw honey and garlic, this is a seriously healthy snack or side dish.
Sprouts can be bought ready made from most health food or local organic stores. We use chick peas here but the mixed sprouts work just as well. If you are keen sprouter, growing them yourself is very simple. You can buy a layered sprout grower or a glass jar and although it takes a couple of days, it is very simple to do.
This humous works with just about any salad, with crudités, pittas, sourdough or if you're like me, on it's own with a spoon.
Makes 250-400 grams (serves 4)
- 350 grams of raw sprouted chick peas or mixed sprouts
- 1 garlic clove
- 2 tablespoons of tahini
- 2cm fresh turmeric root
- 2cm fresh ginger
- 1 teaspoon of ground turmeric (add another if you can't find it fresh)
- 2 tablespoons of liquid aminos or tamari (gluten free soy sauce)
- 2 tablespoons raw honey
- juice of two limes
- 1/4 cup cold water
- 1/4 cup olive oil or rapeseed oil
- salt and pepper to season
Using a blender (we use Vitamix), blend the ingredients together for 5-10 seconds and then use a pulse setting to create the texture you want. We prefer to keep a few chunks but you can blend it fully to make a smoother, paste like texture. You can always add a little more water to get a smoother consistency.
